With deep green leaves, and crisp, paler stems, watercress is related to mustard and is one of the strongest-tasting salad leaves available. It has a pungent, slightly bitter, peppery flavour and is highly nutritious, containing significant amounts of iron, calcium, vitamins A, C and E.

Watercress is also known by the name Nasturtium Officinale. This may help to explain its peppery flavour. The flavour of the Baby Cress leaf is very similar to that of horseradish. The stalks are crisp and the baby leaves have a clean and sharp burn on the palate. However, this soon disappears and leaves notes of citrus and fresh grass.
